I want to thank all of you all for your support. I appreciate the comments.

I jumped up and down naked on the scale again. 1.6 pounds down. I think I jolted something with all those apples.

I checked to see what my "healthy" or "ideal" body weight would be for my frame. I think I have a small frame as I can touch/overlap my fingers on my wrist. Which I was shocked to find out because I always saw myself as a medium frame kinda gal. Bigger boned. LOL. For my height, appx. 5 ft 4 in, my ideal body weight is 117-128 lbs. That is crazy! I thought it was 125-135 lb on a "medium" frame so I thought once I hit 135 lbs I was done. But I do notice that my body fat index is still 29-30 %. To get to the recommended <25% I would have to lose another 10 pounds. Ug! Maybe I'm wrong about my frame size (fingers crossed). I'm going to go measure myself again and again until I get to the medium frame! :))

Damn Chocolate and Damn Derby

Back in the 140's. I knew it would happen. I actually ate 4 mini chocolate chips last night inside some homemade yogurt. I ate some 8 pecans too though. And I ate 1 bite of almond flour bread that had some honey in it. I was hungry and tired after roller skating for 2 hours straight. I as I was putting blister bandaids on my open blisters I got really dizzy. I was sure my sugar was dropping. My hands started shaking too. So I shook my way to the fridge. No biggie. It's noon today and I'm doing and feeling much better. I'll eat lunch soon and no roller skating for me today. I also tend to get water weight gain if I skate a few hours, especially if I get blisters.

Sometimes All You Can Do Is Cry

I have to share. Ok, so I went to a new super market up the street yesterday. I noticed they had a display of something or other. I looked in and noticed it was "Mexican" sweet bread (pan dulce). My absolute favorite thing in the world! Now, I'm from El Salvador but Mexican, Cuban, or Puerto Rican it's all good to me! Every cell in my body was screaming, "COMELO!" - translation... "EAT IT."I felt this rush of emotions. I was elated that I found this delicious delicacy right up the street from my house! But at the same time I felt this overwhelming sense of sadness. Ok, more like gloom. This was it! I had met my match. I could keep myself from eating a box of cookies even under the influence of Ambien. I would stop eventually. The diet was more important. But now, staring at my favorite pastry, smelling the anise and vanilla, I became weak and sad. I stared at it and cried. I just started crying. I though, "Damn it! If I wanted to starve I can just take my 3rd world ass back home! Damn it! Damn it! Damn it! I came to the USA for a better life and life without pan dulce isn't a life!" Forget my thyroid issues and new found gluten intolerance. The horrible reality hit me that I would never ever eat pan dulce again. I'd rather die fat than live skinny. There were 6 pieces left in the bread pantry and I wanted ALL of them! I sobbed even more. I couldn't speak. I noticed the cashier/owner looking at me through the security mirror and I looked around and felt like I had gotten caught stealing or something. I whimpered and turned away. I walked in a circle around the isle of produce twice. I was sure this woman was going to call the cops on me. I walked right up to the counter to pay, with only 3.5 oz of dignity and 3.5 oz of sanity left, and emptied my basket on the belt (no sweet bread). She waited. I paused, ready to assure her I hadn't stolen anything but a glance. The knot in my throat was still not letting me speak. Then she tells me in Spanish, "you can use food stamps". Huh? "No, no, I have money" I said thinking she was accusing me of stealing and I yanked out my check card. "Lonestar food stamp carta (-card)?" she asked again. "No, no, VISA Check Card! No, no VISA tarjeta! Carta! Card!" I said again and again. I was confused and rushed out. It finally dawned on me. She didn't think I was stealing. I must have just looked that hungry and that longingly at the bread that she thought I didn't have money for it or wanted to console me by telling me I could use my "food stamps" for it. I think she was going to offer it for free if I hand't insisted on "no, no, VISA CHECK CARTA/CARD/TARJETA!" 



Lessons Learned:
1. You can walk away.
2. You can be sad.
3. In TX, they accept food stamps for Mexican sweet bread.
4. A Mexican will pity a hungry desperate Salvadorean.
5. It's OK to look, it's ok to cry but leave before they call the police. 
6. The HCG Diet is difficult.
7. We can do this difficult diet!

Round 2 VLCD Day#24, TOM Day #3

Happy to see the scale show I went down .8 lbs. Yesterday at roller derby I was so weak that my muscles in my legs were shaking after a few rounds and a few hits on the rink. I had to sit out and watch for the next hour and a half. I think it's a combination of low potassium levels and TOM (which always gives me crazy problems). I haven't had jaundice as much this round though! :)) I had two more almond flour balls when I got home and had two today. I feel MUCH better. The potassium count in those things are pretty high so I think that's helped. Even if it ends up reflecting some on the scale I rather it reflect on the scale than on an x-ray in the emergency room when I break an ankle out on the rink due to weak muscles. I'm going to skate for a few hours tomorrow and if my legs hold up then I know for sure it's the potassium.

I found a bread recipe that can be used for Phase 3. At least I think it can be used for phase 3. I'd love to hear some feed back on it if it makes you gain. I'll let you all know ASAP if it makes me gain anything once I get to that phase.  This can be used for sandwiches and "toast" pizzas. This is again from Elana's Pantry and I've adapted it to be compliant with phase 3. It does not come out as dark as hers did and I think it's due to the lack of agave nectar. I ended up adding 1/2 a cup of flax seed meal on a second loaf instead of the extra 1/2 cup of almond flour.

simple bread
Gluten Free Simple Breadprint friendly recipe
2½ cups blanched almond flour (OR 2 cups of almond flour and 1/2 cup of flax meal/fine ground seed)
½ teaspoon salt
½ teaspoon baking soda
4 eggs
5 drops of Stevia
½ teaspoon apple cider vinegar

  1. In a large bowl, combine almond flour, salt and baking soda
  2. In a medium bowl, whisk the eggs, then add Stevia and vinegar
  3. Stir wet ingredients into dry
  4. Scoop batter into a well greased 6.5 x 4 inch loaf pan (this loaf pan may have been discontinued. Stay tuned...)
  5. Bake at 300° for 45-55 minutes on bottom rack of oven; until a knife comes out clean
  6. Cool and serve
Makes 12 slices

Round 2 VLCD Day #22

Finally! I lost .8 lbs!! It's finally going down! Even with TOM around the corner. I'm happy. I needed to see some type of loss to feel a bit more encouraged. I did notice tat last night I didn't cramp as much in my legs. I ate an almond matzoh ball. The recipe is in my favorite book Elana Amsterdam's the Gluten Free Almond Flour cookbook. The protein and potassium is so high in almond flour I think that having a little ball of boiled almond flour ball did the trick.  I didn't do it with stock or made the soup, I just made the almond balls. I usually freeze them for my son and mix them with rice to minimize the carbs in the rice and increase his protein intake. If you mush the balls up and dry them out some on the counter they also make good "mock" rice.

gluten free matzoh ball soup


Gluten-Free Matzoh Ball Soupprint friendly recipe
4 eggs
2 teaspoons celtic sea salt
¼ teaspoon pepper
2 cups blanched almond flour, sifted
6 cups chicken stock

  1. In a medium bowl, beat eggs, (1 teaspoon) salt and pepper for 2 minutes
  2. Stir in the almond flour
  3. Refrigerate the mixture 2-4 hours
  4. Remove from refrigerator
  5. Heat a large pot of water (with 1 teaspoon salt) and bring to a boil
  6. Roll the batter into 1-inch balls then drop into the pot of boiling water
  7. Reduce heat, cover and simmer for 20 minutes
  8. Heat 6 cups chicken stock in a separate pot
  9. When the matzoh balls are finished, remove from simmering water with a slotted spoon and add to chicken stock
  10. Ladle stock, plus 2-3 matzoh balls into individual bowls and serve

Almond Flour

I have to admit I am looking forward to being able to eat almond flour in Phase 3. I hope I don't gain on it but have heard good things about both almond flour and coconut flour. In the HCG Diet Made Simple book the writer states that "flours, rices and grains DO contain starches, EXCEPT for almond flour, which contains 1.03 grams of starch in every 100 grams and coconut flour contains none." Also almond flour is considered a "superfood". It is highly nutritious that is low in carbs and packed with vitamins, minerals and good fats. In Elana Amsterdam's book the Gluten Free Almond Flour Cookbook she provides readers with a breakdown of the nutritional values of almond flour vs. other flours. It's crazy!

For 100 grams of each floor they contain the following:
                                  
Almond Flour: 21.94 g of protein    <1 GI (glycemic index)     10.4 g of fiber
White Weat Flour: 9.71 g                71 GI                                   2.4 g of fiber
Rice Flour: 5.95 b of protein            98 GI                                  2.4 g of fiber

You can actually make sandwich bread and hamburger buns with almond flour. I've really learned to LOVE it! My son is a picky eater and since almond flour is so rich in proteins, fiber and vitamins/minerals I sneak almond floor into anything I can. Tonight I made him some matzo balls that I later use for "rice". If you cook the boiled matzo balls, smash them up and make a mock tortilla. You can use almond flour to "bread" veggies like zuccinis and pickles. As soon as I get to that face I'm going to share all my recipes with you all. I hope it helps! I mean...pizza! We can have pizza!!! Oh I'm so excited.

The Quinoa Debate

Round 2 VLCD #21

I did better during the day yesterday but still ended up eating a yogurt, apple, some toffee peanuts and chocolate chips at night. I felt I did better during the day though because I felt I didn't pick at food throughout the day as much as I have been. I also keep spotting heavier but no TOM. I have endometriosis and cysts so I tend to have bad hormonal surges every now and then. I'm sure the HCG and TOM issues have something to do with it. Last night I was ready to throw in the towel. I just wanted to get off the diet and forget about losing weight. I have had a more difficult round this time around and I started at a higher dose. I think that might have had something to do with it. I'm getting leg cramps at night and feel exhausted. It's ok though. I'm committed again today. I have roller derby practice tomorrow evening and might skip it again. I think that helped on Sunday. I skipped it because I just felt outright weak.

Even with all that said I think having HCG and the diet has provided me with a great opportunity that I didn't had before to lose weight. All that exercise and food restrictions with nothing to show for it. I've only lost a total of about 6 pounds for these 21 days being that I really started to "mess up" about a week ago. Again I keep telling myself it's ok. Each round is going to be different and each person is different. For those of you out there that are not having as much success due to "cheating" on the diet tell yourself it's ok and keep going. There is nothing "wrong". There are so many factors that can alter your success rate. The potency of the HCG, the delivery method, hormonal changes, TOM, and stress to name only a few. So even though I love to read everyone's blogs and am happy to read your success stories I have to admit I secretly feel a bit sad that I haven't been able to lose as much or keep as committed. It's easy to fall into a state of negative thinking and feel helpless and hopeless. So for those of you out there who have the same issues... it's ok. Your 6 pounds is not someone else's 16 pounds but it's YOUR hard fought 6 pounds! :) Re-focus and re-commit. Forgive yourself for the handful of chocolate chips and let it go. It's pretty awesome that you have committed to such a huge life style change. So to everyone out there congratulations and let's all keep on losing! I'm gonna go have a cup of hot tea now.

Yesterday was a bit better with hunger but I still wasn't perfect with my eating though I was better. I'm begining to have some "spotting", but TOM isn't suppose to come around until next week. Who knows. I'm just going to keep plugging away.

Round 2 VLCD Day #18

I did the apple vinegar last night and did pretty well during the day but didn't do so well at night in bed. I will try again today. If I'm so hungry today that I can't concentrate I might go ahead and call it quits on this round. I've taken appetite suppressants every day this round and maxing out the dose now every day and having to take 2x the sleeping pills to knock me out. I'm going to try a simple over the counter suppressant today instead of the doctor prescribed ones. I've increased my tea and coffee intake and that has seemed to help. I've also been taking the probiotic supplement this entire time. I've been cooking for my son and family every day and all their food is made from scratch. I try it since I've never made it before and to check if it tastes ok/seasoned enough. That's really hurting me this round. Then I want to eat. I'll be good and not cheat but by night time that's all I can think of and by 10pm I've taken a sleeping pill to forget about the food and hunger pains (since I can't seem to sleep without it I"m so hungry) and forget it, it's on. This morning I had chocolate chips in my pockets that had melted as I slept. They were all over me and the bedding. Even  my dog. One was half way in my nose, I'm suspecting I tried putting it in my mouth. This is a new bottle of HCG, 2 days only. Ugg. I'm frusterated at myself more than anything else and so tempted to stop RIGHT NOW! I'm going to try again today. Will take the vinegar water this morning. The worst part is that today is "cooking day" for all the meals I plan for the family during the week! Sucks.

Ketchup Recipe

I have started getting together my recipes for Phase 3 since I start it in about a week. One I was able to find that I was going to share with you all was a ketchup recipe. Fairly easy to make though I noticed it takes a long time (hours) for the tomato juice to reduce down to paste and doesn't taste the same if you use paste right off the bat.

Modified from the recipe in Breaking the Vicious Cycle. Make sure your tomato juice is either made with a juicer using organic diced canned tomatoes or you use a low sodium/no salt added tomato juice. I ended up using the diced canned and squeezed the juice out with some my hand and a sieve and used the mush/paste for pizza sauce. Freeze the paste/mush to use for later.



Ketchup
4 cups of tomato juice
2-4 Tablespoons white vinegar
2 bay leaves (optional- but adds flavor)
salt and pepper to taste
5-7 drops of Stevia (add in additional Stevia to taste, I haven't gotten a good measurement of this yet.)

Mix all ingredients except Stevia and simmer on stove until thick, stirring often to prevent sticking. Like I mentioned, mine took about 2-3 hours. It's messy when it bubbles but makes great ketchup! When almost to desired thickness begin to add your drops or packets of Stevia. Here is where it's a bit tricky. Just add the Stevia drop by drop or packet by packet, stir and taste until you get it sweet enough. If you want to make "spicy" ketchup add either Frank's Hot Sauce (it doesn't contain sugar) or cayenne pepper in the same manner as the Stevia, little by little until you get the desired "ouch" on your tongue.

Round 2 VLCD Day #17


After eating a couple of nights ago yesterday was much better. I tried doing more warm teas as nikkispower suggested. I tried doing the apple cider vinegar but couldn't get it down very well BUT I will try it again today with a little less vinegar. Everything went well until last night when I got really hungry and broke down and ate some yogurt which would have been fine if I wouldn't have put all those chocolate chips in it. I did however go down the .2 lbs that I had gone up though. I am not too upset about it because I'm a believer that you have to let lose a little every now and then and NOT beat yourself up for it. We're all human. We all know that eating chocolate chips is a no no. But sometimes we just need the damn chocolate chips. Forgive yourself and move on. If you stay focused on any failures it becomes easier to feel it's too difficult to continue and you give up the diet. It's better to cheat and eat, feel human and get the chocolate euphoria high, forgive and refocus. I've lost 32 lbs in only 2 rounds. True, I might have lost 42 lbs if it wasn't for chocolate! I'm ok with that. So for everyone out there who is really hard on themselves 'the day after', don't. But refocus and commit to the next 24 hours as cheat free. 


On another note though I've had so much of my fat be lost during this time that I'm losing fat is places I never thought of. MY FEET! Yes, the bottom of my feet and heel. This is bad because I have torn ligaments/tendons around the balls and sockets of a few joints and those fat pads were crucial in minimizing impact to the joint/tear. I mean, come on! I'm sure I have more fat on my thighs that could go first. I see it jiggle and ball up so I know it's there. Why my feet first?! Now it not only hurts to hit the floor when I get knocked down in roller derby but it hurts just to stand in my skates. I've put more padding in my skate and wear thicker socks. I can't wear any of my nicer shoes and am stuck to wearing only my tennis shoes ALL THE TIME with additional padding and orthopedic insoles in those too! Oh well, I shouldn't complain! I just thought that was weird since I thought it was just that my feet were tired until my husband looked at them and noticed they were "skinny". Sure enough, no fat. Is this what we all have to look forward to, the aches and pains of skinny girls?! I will keep my fingers crossed for all of us. :)

Last night I broke down and had to have some food. I was so hungry and none of the diet pills had been working. At night I evetually took a piece of an almond flour carrot muffin and ate various pieces of chocolates.I was under the influence of my sleeping pill but very aware of what was going on. I felt like I just really needed that break and allow myself some food. I dreaded waking up this morning but surprised I had lost .2 pounds. AND the best part is that I wasn't starving any more today. It began to feel more "normal" or similar to what my first round felt like. So I'm hoping that helped more than hurt. I was even considering not finishing this round  or quitting for a few days. I've been too hungry. I was better today about eating but I did try 2 squash chips and had a few pecans. Besides those deviations I've been pretty good. We will see what the diet gods say tomorrow morning. Will they punish me for my insolence? They might curse me with a 3 pound gain over 2 chips and 6 pecans. I will let you all know in the morning.

I'm happy to see that I dropped a pound today. I woke up very hungry though so I decided to eat two egg whites this morning. I'm still trying to find that right balance of calories/hunger/exercise/HCG amount.

I had gained a bit today. I was kinda sad about it since it seems that this round has been more difficult. But I'm sure that every round is going to seem like the most difficult at that time. I've been picking a lot at the food that I've been cooking though with the excuse that I have to try just a nibble to see if it's seasoned enough. A lot of it is made with almond flour but it usually has butter/oil and agave nectar/honey. Ug! But I've avoided opening the almond butter jar so I can stay away from it!

Round 2 VLCD Day #9


Last night I ate pretty late. I ate stewed buffalo and salad. I ate around 9:30 pm so I was a bit worried about how eating late would affect weight loss. What I've noticed with me is that as long as I don't eat things that are not on the protocol the time I eat doesn't seem to matter. 


I'm happy because I finally reached the weight I was at before I ran out of HCG a week ago and gained in the 3 days I was waiting for it to come in and the 2 days I reloaded on. It took me 7 days to get to this weight last time but I was a lot less hungry and did not cheat. This time I have had my sleeping pill induced moments of uninhibited eating. So I'm really happy and pleased. 


I have a fellow derby league member that is also doing HCG. She is doing the homopathic version she bought online. I asked her how affective it was as it was much cheaper that what I was paying for injectables. She's lost about 13 pounds in 17 days so it does seem to be working well for her. She also stated she wasn't very hungry and some days had to remind herself to eat. I'm very curious now to see if I would have similar results. I do think that this time I am going to order the HCG online and save some money. If anyone has any suggestions on who you've ordered from I"d love to hear them! :)

Round 2 VLCD Day #7

I was better yesterday and was rewarded with a 1 pound loss. I did eat a very small zucchini almond flour muffin though. I make them with almond flour, agave nectar/stevia combo, and tons of ground zucchini. It does contain butter, eggs, and 24 hour yogurt. I ate it pretty late at night so I'm really happy that the weight loss was still there. I started making things with almond flour recently and have found it to be so yummy. I can't wait until I get back on Phase 3 as we are aloud to use almond flour. I will post recipes I use and pictures. I have a feeling that the yogurt will be "legal" on phase 3. I make it myself and leave it for 24 hours so that the yeast break down all the sugar into a one chain sugar and it's easier to break down. I have a feeling that brings down the sugar content/GI in the yogurt. I'm not sure though. I made some with fat free half and half and it turned out like Greek yogurt. I also found a "pasta" that was ok to use in Phase 3! Ok, so it's not pasta but it's a pretend pasta. Spaghetti squash! I didn't know there was a squash out there that when boiled made spaghetti strands. I posted a picture of it. If anyone is interested I can add some recipes before I get to phase 3. I know that someone had a difficult time posting to my blog so I"m not sure if there is a setting I don't have correctly. If that's the case I apologize.

Last night I again ate too much and today the scales shows it. I've just been so hungry lately! I know that exercise is not recommended during the VLCD phase due to the risk of increased hunger. I'm sure that's part of it. I don't want to stop practicing roller derby during the VLCD days though. I have stopped all other forms of exercise. I skated last night and this morning but I won't be skating again until Wed night. I hope these next few days are better. :(

Round 2 VLCD Day 3


I had a weak moment last night. I'm glad I still lost a pound. I was so hungry that at night I ended up eating meat patties and chocolate. I was under the influence of Ambien but I knew what I was doing. No excuses!  My husband was actually suppose to be watching me and not allowing me to eat but I think he falls asleep before I do! I think he also feels bad for me and always says, "just don't eat more than one". Of course it's never just one! That's ok though. I won't be too hard on myself. Tomorrow is a new day and tonight I will handcuff myself to the bed! Lol.

They Call It Mellow Yellow

Round 2 VLCD Day 2

I'm yellow again today. A touch of jaundice. What is it with that? I was a bit tired today too but nothing alarming.

I was happy to see that I had lost about 3 pounds. I really needed to see that on the scale! I was getting a bit down for gaining so much weight during the days that I ran out of HCG and for the 2 loading days I chose to redo. I had gotten to 141 lbs before I ran out of HCG so getting to near 149 lbs in 5 days was a tough. I hope it keeps going down quickly and I can get back to where I was before I ran out of the HCG. I'm still a bit hungrier than I was a couple of weeks ago when I started Round 2. I hope the hunger doesn't last through out the entire round. This round is still much easier than the first round.
