Diet: I made it through the first day of phase 4 ok. I made some sesame crackers and garbanzo flour bread. I tasted a little bit if the bread but didn't have a piece yet. I did have some amaranth/flax cereal, about 7 TBS with Mootopia milk. I also had 2 80% chocolate chocolate chips! I had 2 tsp of amaranth grain too. That's about it for sugar and starch stuff. 


Exercise: Roller derby speed class 1.5 hrs followed by roller derby pack drills and training 1.5 for a grand total of 3 hours EARLY this morning.


I bought an ice cream maker and am going to make this ice cream recipe from Elana's Pantry:

Roasted Banana Coconut Ice Cream
4-5 medium bananas, sliced into 1" pieces
2 dates, chopped
1 tablespoon vanilla extract
2 tablespoon coconut oil
1 (13.5 ounce) can coconut milk
  1. Place bananas and dates in a 11-by-7-Inch Pyrex baking dish
  2. Drizzle with vanilla and coconut oil
  3. Bake at 375° for 35 to 45 minutes, until bananas begin to caramelize and smell fragrant --do not let burn
  4. Place banana fixins and coconut milk in Vita-Mix (or other high speed blender) and puree on highest setting until smooth
  5. Place mixture in ice cream maker and freeze according to directions
  6. Top with nuts, berries or sprinkles and serve

Round 2 Phase 3 Day 23

Hurray. My liver is happy that it can start getting a slow rest for the next 5 weeks. Because I did the round for more than 23 days then it's suggested that between Round 2 and Round 3 there be 3 weeks of P3 and 5 weeks of P4. I can start round 3 on the 4th of July. We'll see how it goes by then. I'm not too scared about  the foods and what to eat, it's the AMOUNT of food I can eat. And the late night munchies. We'll see, one day at a time. I still have to take off this pound I gained from yesterday. I ate less food today and went heavier on the vegetables. Tried to cut down on almond products today and only had walnuts with 1/2 a jar of yogurt. So we'll see.

Yesterday I woke up and I was up almost 2 pounds. I freaked. I hate that feeling right after I wake up and realize I'm walking towards the scale. I hold my breath until the number pops up and then it's either relief or terror. I ate more than I should have on Tuesday because I ended up getting really hungry in the evening. I ate my homemade 24 hour yogurt with walnuts and half an apple. I ate around 10:30p. I also noticed I was hungry through out the day. I don't break the protocol. I don't eat foods outside of "the list". I just tend to eat a lot of it I think. My husband weighed himself the other day and he had lost another 5 pounds. If I continue on my diet he's going to disappear. He's 6 feet tall and weighs 152.0 lbs. About 25-30 lbs under weight. I diet, he loses weight. Stuffs his face with food all day if he can. He loves cakes, cookies, fried food and snooty beer (micro-brews). My son is 5 years old and 37 lbs. My daughter is 7 1/2 years old and 48 lbs. I've tried to fatten them all up and can't. Just my luck. 


I've been trying to read more about gluten free breads and gluten free whole grains. Is anyone else going to omit gluten from their diet even on P4?

What I don't like about gluten free stuff is that when you want to make bread you have to mix tons of flours to get the right one you need. Or they're just rice flour which I think tastes a little funny. Or they are outright EXPENSIVE. 

I did find a spaghetti that the kids liked with no gluten:

Round 2 Phase 3 Day 20

I was going to write earlier in the week but it was a bit boring. I'm maintaining but I can't get to the LIW of 136.6 lbs. I don't think I'm moving that 140 so I'll let it be. I did a steak day on Sunday because I was really hungry on Saturday and ate late. The scale reflected it. I still take the diet pills though I notice I'm taking them less now. I'm a bit less jaundice and attempting to eat more vegetables and lean protein though I really crave nuts. Walnuts, pecans, whatever. I also crave fatty cow meat. :) I'm happy with meat and cheese.

I finally went to the store to buy new pants. I was wearing a very tight 8 or a just right 10. I figured I would get another 8 or a 6 since my pants were fitting so lose. I was a size 4! A size 4!!! I've NEVER EVER EVER been a size 4 in my life. When I played tennis for school I was a size 16. I was actually the most fit and in shape back then. In college I was a size 12 to 14. After having my kids I had liposuction after I had lost my pregnancy weight and began to have more problems with hypoglycemia and thyroid tumors. I didn't care where they took the fat cells I just wanted them out. But I went down to a size 8-10. NOW, ge'ez I couldn't believe it... a 4. I didn't want to commit to a size 4 yet. I bought one pair of jeans. Really stretchy jeans.

3 more days of phase 3 and then the scary part of adding sugar and carbs comes into play. I'm thinking a half of a banana to start. I can use the potassium.

I start my physical fitness bootcamp again in June. It's usually 3x a week for 1.5 hrs each time. It's outside in the hot TX sun. One day last summer it was 109 at 6:30 pm here. If I can't keep my weight down with roller derby 3x a week and boot camp in a hot sauna 3x a day I'm going to go nuts. Nuts? Did any say nuts?! Yum.....

Keep Healthy

I remember once I asked the nurse at my HCG doctor once why they didn't follow Dr. S's protocol and only administer his suggested dose and complete all phases. At my doctor's office they bump your dose higher and higher each time you reach immunity and do the weight loss and do P2 NONSTOP until you lose the weight or get sick of it. The nurse said it was because the doctor thought Dr. S's protocol was hard enough as it was and adding the phases or sticking with the recommended dosage amounts is too difficult and cumbersome. Eventually you can't get around it. Your body will take the toll, you will gain it back, you will get frustrated and you will get sick.

My background in medicine is limited only to veterinary medicine. I think sometimes it's better than "people" medicine. Bottom line is being over weight is NOT HEALTHY. Diabetes is a terminal illness. As my diabetic father says, "At least I know how I'm going to die... I'm going to die sweet." Exercise and a healthy balanced diet are not the way to weight loss for some. So for those of us who can't just exercise and stop eating bad food there is stuff like HCG. The risk has to be a calculated one though. The side effects of a low calorie diet and hormone intake can not out weigh the side effects of obesity. I think following the protocol helps keep that balance.

Remember to forgive ya'llselves for any mistakes or setbacks ya'll make while on the diet. Reminder yourself why we are doing this... to be healthy. I know we all get impatient and love to see the weight come off fast. I know I'm the most impatient person in the world. But I have to remind myself why I started this... to be healthy. So I have a bit more than a week left on P3 and then my poor liver can have a well deserved break and get healthy.

If you're like me you might find it difficult to drink enough water during the day. My mother got this sodastream soda maker for my husband back in Feb and it was really a great gift. I've found you can find them on sale at Kitchen Collection outlet stores. They run from $85-100 for the system and your first tank of fizz but it's cheaper than the Stevia cokes over the long run. Just add lemon to the water or use their diet coke mixes (just beware they use Splenda for their diet sweetener).

Phase 3


I think I had an unhappy liver. I know that high protein and high fat diets can affect your liver or kidneys. Something about an unnecessary strain on your liver that takes fat and breaks into down into amino acids. Too much fat= too much liver work. Also ketosis is always a problem:

Prolonged consumption of high protein sends the body into a state of ketosis. That’s top of the list of cons of high-protein diets. Ketosis occurs when the liver converts fats into fatty acids for use as energy and the by-product, ketones. Ketones increase the acidity of the blood and can be detected in the urine. In extreme cases of starvation or fasting, the body undergoes gluconeogenesis, which is the production of glucose from sources other than carbohydrates, primarily protein.

Possible kidney damage

High-protein diets place a lot of stress on the kidneys. The initial weight loss on high-protein diets is from water loss. When carb intake is restricted, the body uses muscle and liver glycogen for energy. For each gram of glycogen, two grams of water are used or “lost.” The minute you give into your carb craving, that weight will come back. The diuretic effect of eliminating carbohydrates from your diet stresses the kidneys while they remove urea, a by-product of protein synthesis, from the body. Compounding that problem, when the body is in a state of ketosis, increased levels of calcium are excreted -- that can lead to kidney stones; a build-up of calcium in the urine. Think about the experiment when you put a nail in a cup of Coke: After a few days the acid in the soda starts to dissolve the nail. The same breakdown happens to your bones. Calcium (along with other minerals) is leached from bones and teeth because of the increased acidity of the body. Literally pissing away calcium is a major con of high-protein diets because that will have a negative effect on your workouts. Calcium is a necessary mineral for muscle contraction and nerve impulse. Calcium loss can also lead to stress fractures.
Ketosis
Ketosis is the presence in the blood of abnormally high levels of acidic substances called ketones. The normal body fuel is glucose. Ketones are produced when there is not enough glucose in the bloodstream, and fats have to be used. When fats are used excessively as fuels, they are eventually converted to ketones. The real danger in ketosis is that ketones are acidic, and high levels of ketones make the blood abnormally acid.
Normally the blood ketone levels are low, but in starvation, untreated diabetes and when the diet is very high in fats and low in carbohydrates, the levels rise. Ironically, in diabetes, the blood contains large quantities of sugar, but because of the shortage of insulin, this glucose can't be used as fuel.
Mild ketosis may be a feature of excessive morning sickness in pregnancy and crash diets.
Ideally, fat burns in the flame of carbohydrates. When the body lacks sufficient carbohydrates to produce glucose for energy, it is forced to use stored fats for fuel. The brain and other organs are forced to rely on ketones as the primary energy source when the required carbohydrates are missing from the diet. (See also: BellyBytes.com: Carbohydrates)
Unfortunately, there are some not-so-pleasant side effects of ketosis -- among them constipation and bad breath. Short-term weight loss occurs quickly during the initial phase of the high-protein diet, partly because eliminating carbohydrates causes a loss of body fluids. The body is depleting liver and muscle glycogen (stored glucose) as well as excreting toxins via the urine.

I think that's why it's important to still to Dr. S's protocol and not cut the phases short. Phase 3 and phase 4 are crucial for giving both your kidney's and liver a break. People with insulin resistance like me end up putting some pressure on your pancreas with carb intake but I think we need to find that balance. I know some people could use this information to make an argument against the HCG diet but I think that they don't understand the entire diet. We use our weight, +-2.0 to gage how balanced our diet it.
I still have 9 days or so left on Phase 3. My liver will hold out ok until then and I'm making sure I'm eating my apple/oranges and veggies. I've also gotten some milk thistle. I dropped a pound from yesterday until and I was a bit less yellow today. I still haven't bought the glucometer to check my sugar but honestly I just don't want to know right now. I have to remember: drink water, drink water & drink more water!
Ok, lesson learned. I'm not going to cut phase 4 short this time. Imagine that?! Dr. S was right. Follow the protocol.

Gain, gain and more gain

That's an incredible gain, in a bad way. What's the deal? I haven't cheated at all. Nothing off the protocol for phase 3. I'm so frustrated. Oh and I won't even mention exercise. I guess hours of roller derby isn't enough. Ug! My hands and face are a bit swollen in the mornings. I didn't want to do a steak day today because I can tell my sugar is dropping if I don't eat. I get dizzy and shaky. I have to get a glucometer but part of me doesn't even want to know. I didn't have this problem after the first round of HCG. Every time is different right? I'm frustrated but not giving up. I've been hungry the last few days too. Really hungry. I've eaten a bit more than what I ate today the last few days. Today I took diet pills today. If I'm hungry there is no stopping me from eating. I'm drinking a lot of water though it seems like I'm never fully hydrated. My diet today:

Breakfast:
2 eggs (over easy no butter)

AM Snack:
1/2 apple
1/3 cup of homemade 24 hour yogurt with Stevia
5-6 walnuts (halves/pieces)

Lunch:
1/2 sirloin steak
small lettuce salad with sugar free organic buttermilk dressing
4 pieces of cauliflower with cheese

PM Snack:
4 walnuts (halves/pieces)
4 oz of homemade coconut milk with a tiny bit of stevia
1/2 homemade coconut flour "cupcake"

Exercise (planned): 6pm-7p speed skate class
                                7p- ? roller skating

Running a low grade fever. (Which I usually do, nothing new).

I'm going to go bang my head against the wall now. Does that count as exercise?

Energy At Last and Coconut cupcakes

I felt so much better at roller derby practice today. I skated the entire practice without having to take a break! (Except to skate to my water bottle). It made all the difference in the world to eat and to pack on the protein. I'm exhausted now of course but I'm so happy. Of course when I got home I had to eat, probably way too much. It all fit on a small plate though. I don't even use the regular plates. I'll fill them up. I had homemade garlic cumin yogurt with my roasted chicken and cauliflower with cheese. For dessert I ate about 1/3 cup of homemade 24 hour yogurt with a small apple and walnuts in it. I also ate one of my coconut cupcakes (no frosting of course). I keep telling myself they are ok to eat since I used Stevia for the sweetener! :) I made them without the jelly inside them. Here is the recipe from Elana's Pantry website. I substituted the agave nectar with 2-3 packets of Stevia or the naughty vanilla flavored Splendra. I used a little bit of homemade coconut milk to make it less thick since I omitted the agave nectar.

Jelly Donut Cupcakes
for the cupcakes:
3 eggs
½ cup apple sauce
½ cup grapeseed oil
½ cup agave nectar (2-3 packets of Stevia and a little bit of coconut milk to get it from being so thick)
1 tablespoon vanilla extract
½ cup coconut flour
½ teaspoon celtic sea salt
¼ teaspoon baking soda


  1. In a food processor combine eggs, apple sauce, grapeseed oil, agave and vanilla and pulse together
  2. Pulse in coconut flour, salt and baking soda
  3. Allow batter to sit and thicken just a bit
  4. (for the jelly) omitted
  5. Next, line a cupcake tin with unbleached paper liners
  6. Spoon 2 heaping tablespoons cupcake batter into each cupcake liner
  7. omitted
  8. Bake at 350° for 20-25 minutes
  9. Remove cupcakes from oven and allow to cool for 20 minutes
  10. omitted
  11. Cool and serve

Protein

It's the protein. Today my hands were not swollen and sure enough I was down about 2.5 lbs. I'm going a little heavy on the protein intake again today. I'm preparing a steak for lunch with some cauliflower with cheese. I'm having homemade 24 hour yogurt with walnuts for dessert. But since life is uncertain, I eat dessert first. :)) I didn't run a fever last night. I had been running a fever at night the last few nights. Again, I think the HCG dose was way too high.

Sesame Crackers

Again this recipe is from the Gluten Free Almond Flour Cookbook. I'm not a cook as I'm too impatient to follow directions but all her recipes come out pretty good even if you just throw things together or cook stuff right on top of the parchment paper (I think you're suppose to move the stuff to a baking sheet). Oh and I never preheat the oven. LOL

Sesame Crackers
3 cups blanched almond flour
1 1/2 tsp sea salt
1 cup sesame seeds
2 TBS grapeseed oil
2 large eggs

Preheat oven 350F. In a large bowl, combine the almond flour, salt, and sesame seeds. In a medium bowl whisk together grapeseed oil and eggs. Stir the wet ingredients into the almond flour mixture until thoroughly combined. Or if you're like me, throw every thing together in one bowl and mix it all up. Divide the dough into 2 pieces. Place 1 piece of dough between 2 sheets of parchment paper and roll to 1/16 inch thickness. Remove the top piece of parchment paper and cut the dough in 2 inch squares with knife or pizza cutter. Repeat with the the other piece of dough (on a different sheet of parchment paper).

Bake 12 to 15 minutes until lightly golden.

Cheese Crackers

Animal Cheddar Cheese Crackers

I tried making these for my kids so I used barn animal cookie cutters to cut them. They are suppose to taste and look like "goldfish" cheese crackers. My son, the pickiest eater in the entire world, didn't like them and my daughter tolerated them. I loved them. 

The recipe if from Elana Amsterdam's book the Gluten Free Almond Flour Cookbook.

2 1/2 cups blanched almond flour
1/4 tsp sea salt
1/2 tsp baking soda
1 cup freshly grated cheddar cheese
3 TBS grape seed oil
2 large eggs

Preheat oven 350F. Elana would tell you to combine the liquids, whisk and then combine with the dry ingredients. I don't have the patience. I throw everything together in one bowl and mix (sometimes even with my hand). Hee hee. Divide the dough into 2 pieces in between 2 sheets of parchment paper and roll to "1/16 inch thickness". I of course just roll them out on one paper cut them out, re-roll on the side of the paper, cut them out, so on until I get tired and just take a pizza cutter to cut them in "2 inch by 2 inch squares" as the recipe says. 

Bake 12 to 15 minutes until lightly brown. Elana suggests they cool for 30 minutes then serve. Yeah right. LOL

Fried Pickles and Shrimp with Kale


Not the nicest picture in the world but it tasted great. I'm horrible with recipes though because I usually just through things into the skillet. But depending on how many people you are cooking for (I was cooking for 1 adult and 2 small kids) you can just throw the amounts together.

For the Shrimp and Kale
1/3 to 1/2 medium onion
1/3 to 1/2 bunch of kale leaves
2 shallot cloves
2 cloves of garlic
1/2 a TBS of butter
1 to 1 1/2 cups of  raw peeled shrimp (Costco is awesome for this)
salt and pepper to taste

Fry everything together in the butter, put the shrimp in last they only take a few minutes per side.

Fried Pickles
New York Style Pickles
Almond Flour
1 egg
Salt
Coconut oil

I put some almond flour in a plate with a little tiny bit of salt, then dipped the pickles in egg and patted them into the almond flour. I put them in a skillet with a bit of coconut oil turning them until brown.

Coconut Milk

I have to admit I dislike coconut. If you want me to get away from your cake, cookie or pastry desert just sprinkle coconut on it and I'll leave it alone. So I've stayed away from the coconut flour and coconut milk that is P3 safe and usually just used milk. But after a month on my second round of HCG I was so happy to get to drink some milk with my coffee (leche con cafe) and so sad to feel the pain in my tummy from the bloating and g.... well you know... that it gave me. I turned back to revisit the coconut issue. The store milk was way too coconutty for me. So I made my own. This is from Elana's Pantry and I have to say, it's pretty good. I didn't put the Stevia or the vanilla in it. I also noticed once it was in the fridge it made the fat skim up at the top and I was able to skim it off and make "skim" coconut milk which made it even better. I got the shredded coconut frozen at the asian market. That seemed to work just fine. The picture below is from Elana's website, not mine. :)

Coconut Milk
2 cups shredded coconut (I use unsweetened)
4 cups water
1 teaspoon vanilla extract
6 drops stevia
  1. Soak coconut in water for 1-2 hours (do not discard water)
  2. In a Vita-Mix (or other high speed blender), combine coconut, water, vanilla and stevia and process on highest speed
  3. Strain liquid through a fine mesh paint strainer bag, discarding solids
  4. Serve

Green Goddess Dressing -Elana's Pantry

Green Goddess Dressing
1 avocado
2 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
½ teaspoon herbes de provence
½ teaspoon celtic sea salt
3-5 drops stevia
1 cup water
  1. Place all ingredients in a Vita-Mix (or other high speed blender
  2. Process on high speed until smooth and cream
  3. Pour over your favorite salad greens
  4. Store remaining dressing in a glass jar in fridge
  5. Keeps for up to 5 days (if it lasts that long)

Water Retention Diet #1
I haven't been cheating but I've been eating way too much food even if it's on the protocol. I'm still getting very hungry all through out the day. To my dismay I couldn't reintroduce milk! :( It gave me some very unpleasant side effects. So I ended up making my own almond, walnut and coconut milk. They turned out pretty good. I think I'm so desperate to eat whatever that even the coconut milk was yummy. I hate coconut.

I've also noticed a lot of water retention in my hands and ankles. I noticed that the first couple of days I was getting off the HCG I was really anxious and my fingers were a bit swollen. I also noticed that my left arm (which was the one I broke and is still partially paralyzed) was going numb and falling asleep. Maybe the water rention was causing some swelling along that nerve who knows.

Yesterday I did a steak day and went down about a pound. I did eat a couple of sugar free almond flour zucchini muffins and coconut flour donuts (sugar free home made). So I can't blame the steak day for not taking me back down to the weight I was 3 days ago. LOL I'm still feeling the swelling in my hands and feet and will try a the water retention diet on Dr. S's protocol.

In addition, I"m going to call my doctor for a new prescription on the diet pills. No way I'll be able to stay away from food. I'll try to ween off of them once I'm noticing I can get the hunger under control. Again, I'm not an advocate of a pill popping life and I'm very much aware that's not the way to go. I also don't want to inject myself 3 x a day for my insulin resistance again. It's been under control since I started the HCG protocols and diets.

I Get To Eat

Yesterday's Weight: 135.6 lb

OMG! I thought this day would never come. I actually couldn't sleep last night looking forward to being able to eat. My injection time on P2 was 4am, I made it until 3:40 am but didn't weigh myself before I stuffed a few almond cheddar crackers I made and chicken/spinach sausage. I barely slept. I woke up this morning after a nap and prepared a spinach/mushroom omelet with some avocado on the side. I did weigh myself before eating the omelet and weighed 136.0 lbs.  For lunch I'm eating kale and zucchini shrimp with fried pickles ( I made the fried pickles with almond flour). I will be roller skating tonight and have a game tomorrow morning along with practice. 4 hours or so of roller derby. I think I just want to have enough energy and food not to feel as faint as I've been feeling. I have to watch my portions though! I'll be stuck with a steak day tomorrow and I'll just cry!

Tomorrow I finally get to eat. I almost made it to P3! I made zucchini muffins with stevia last night and sesame crackers! I'm squirreling away my P3 food and getting everything ready! I bought avocados!! All hail the avocados!!! I will post the recipes later today. I have not tried those snickerdoodles yet I wanted to see how the zucchinis would turn out. I'll give those suckers a try tonight. And I didn't eat anything last night! My husband had to sit next to me and rub my back until I fell asleep. (Poor me!) :)) He didn't let me out of his reach and that seemed to work!

Beginning of the End

Round 2 VLCD Day #38 (?)

I think today is day #38. Yesterday morning I weighed in at 138.8 lbs but later that morning weighed in at 136.6 lbs (I was sure I had some water weight going on). I'm not going to inject myself today and let this be the first day of the end. I will take the 136.6 lbs as the finial injection weight. I will calculate what the total loss was but I think it was just around 12 lbs. About 35 lbs for the 2 rounds. I have to be the worst at keeping to a diet, especially at night. We'll see how it goes today also. :)

Damn it! Right after I posted I ended up being super hungry and eating more snickerdoodle cookies. Crap! This morning my hands were swollen a bit from water retention and I was really emotional. I don't think TOM is the issue. I've just been crazy hungry. Immunity? Who knows. I noticed my doctor suggested a pretty high dose of HCG. I think the dose is too high and I won't follow their suggestion on dosing again. I have one more partial injection left and we will see how it goes tomorrow but I'm glad this round is done.

Round 2 VLCD #35

I ate last night. I had to eat. I was feeling a bit too weak and way too hungry. I saw it on the scale this morning. I ate a almond flour "breaded" drumstick without the skin, about 6 almond flour snickerdoodle cookies with pecans, 1 almond flour matzo ball, and decaf coffee with about 3 TBS of milk. All homemade stuff. But I have to admit, this morning I felt incredible. I could tell I was retaining water, my fingers were swollen. I also skated for about an hour outdoors last night. I'm sure that assisted in pushing me over the hunger edge. I was able to keep to the diet today and I didn't do any roller skating. I think tomorrow will be my last injection day so I can eat for my last roller derby game on Sunday. I'm so unsteady on my skates due to weak muscles. I will see though. I didn't reach my goal of 130 lbs this round. That's ok though. It was a tough round. I went to my doctor's office for a check up on Monday and my blood pressure was a little bit low, I was a little bit jaundice and my sugar was at 140! Ge'ez. And that's way before I ate the snickerdoodle cookies. So I might just get to 135 lb. I do look forward to eating! I'm about to remake those snickerdoodle cookies with Stevia only. I will let you all know if I can make the batch work out ok and what the recipe is!
