Cauliflower Smashed Potatos

I really like this blog, The Spunky Coconut. Not only do I like the name but they have some recipes that can be useful during Phase 3. I can not do dairy without suffering gastric revenge and her recipes are gluten-free, casein-free, and sugar-free. If you can do milk then use milk in stead of the 'weird' milk alternatives.

Cauliflower Mock Mashed Potatoes

Cut one large head of cauliflower into bits and steam until fork tender.

Add the steamed cauliflower to the food processor with:

1/2 tsp Herbamare seasoning
1 tbsp ghee (which is casein-free), or other butter substitute
2 to 3 tablespoons cashew milk

Puree. Scrape the sides and continue to puree till creamy and smooth.
Top with fresh parsley.

Makes 4 servings.

I substitue the cashew milk with Central Market Ancient Grains milk or you can just use milk. She uses Herbamare seasoning and I use Mrs. Dash Original Blend or Bragg Organic Sprinkle Seasoning.

133.0 Shrinking and Sad Belly Buttons

Today's Weight: 133.0

A tiny bit up from yesterday and I was good with my diet yesterday.  I made grilled chicken for dinner and wrapped it up in lettuce. For lunch I had spinach, cheese (a no no), and chicken sausage with a medallion of feta cheese. There is the cheese again...and again. I know I will have to stop the milk eventually but I'm going to hold out as long as I can! The weight may still be left over from the chips! I was so bad! I don't stress out about it too much but do want to make sure I correct the problem. I will cut down on my dairy today, no cheese and I am going to have 24 hour homemade yogurt for my milk fix.

I continued taking the magnesium/potassium supplements and have just added a calcium/vit D chewable from Cosco... fudge flavored of course and with milk. Will I learn? Nope.

I did notice that my skin has receded some. There still is wrinkled up pocket where my pot belly use to be. I still have a sad belly button. You know, when your skin droops on your tummy and makes your belly button look like an upside down frown. :( I'm not too upset about the droopy skin. I'm pretty grateful I've been able to lose the weight.

I'll put up some recipes today for phase 3 and phase 4.
