
I felt so much better at roller derby practice today. I skated the entire practice without having to take a break! (Except to skate to my water bottle). It made all the difference in the world to eat and to pack on the protein. I'm exhausted now of course but I'm so happy. Of course when I got home I had to eat, probably way too much. It all fit on a small plate though. I don't even use the regular plates. I'll fill them up. I had homemade garlic cumin yogurt with my roasted chicken and cauliflower with cheese. For dessert I ate about 1/3 cup of homemade 24 hour yogurt with a small apple and walnuts in it. I also ate one of my coconut cupcakes (no frosting of course). I keep telling myself they are ok to eat since I used Stevia for the sweetener! :) I made them without the jelly inside them. Here is the recipe from Elana's Pantry website. I substituted the agave nectar with 2-3 packets of Stevia or the naughty vanilla flavored Splendra. I used a little bit of homemade coconut milk to make it less thick since I omitted the agave nectar.

Jelly Donut Cupcakes
for the cupcakes:
3 eggs
½ cup apple sauce
½ cup grapeseed oil
½ cup agave nectar (2-3 packets of Stevia and a little bit of coconut milk to get it from being so thick)
1 tablespoon vanilla extract
½ cup coconut flour
½ teaspoon celtic sea salt
¼ teaspoon baking soda

Jelly Donut Cupcakes
for the cupcakes:
3 eggs
½ cup apple sauce
½ cup grapeseed oil
½ cup agave nectar (2-3 packets of Stevia and a little bit of coconut milk to get it from being so thick)
1 tablespoon vanilla extract
½ cup coconut flour
½ teaspoon celtic sea salt
¼ teaspoon baking soda
- In a food processor combine eggs, apple sauce, grapeseed oil, agave and vanilla and pulse together
- Pulse in coconut flour, salt and baking soda
- Allow batter to sit and thicken just a bit
- (for the jelly) omitted
- Next, line a cupcake tin with unbleached paper liners
- Spoon 2 heaping tablespoons cupcake batter into each cupcake liner

- Bake at 350° for 20-25 minutes
- Remove cupcakes from oven and allow to cool for 20 minutes

- Cool and serve

Yes! I'm so glad you got that swelling thing figured out! Protein is so essential esp. in the beginning of phase 3.
