Banana Ice Cream

Round 2 P4 Day 2


Diet: I made it through the first day of phase 4 ok. I made some sesame crackers and garbanzo flour bread. I tasted a little bit if the bread but didn't have a piece yet. I did have some amaranth/flax cereal, about 7 TBS with Mootopia milk. I also had 2 80% chocolate chocolate chips! I had 2 tsp of amaranth grain too. That's about it for sugar and starch stuff. 


Exercise: Roller derby speed class 1.5 hrs followed by roller derby pack drills and training 1.5 for a grand total of 3 hours EARLY this morning.


I bought an ice cream maker and am going to make this ice cream recipe from Elana's Pantry:

roasted banana coconut ice cream
Roasted Banana Coconut Ice Cream
4-5 medium bananas, sliced into 1" pieces
2 dates, chopped
1 tablespoon vanilla extract
2 tablespoon coconut oil
1 (13.5 ounce) can coconut milk
  1. Place bananas and dates in a 11-by-7-Inch Pyrex baking dish
  2. Drizzle with vanilla and coconut oil
  3. Bake at 375° for 35 to 45 minutes, until bananas begin to caramelize and smell fragrant --do not let burn
  4. Place banana fixins and coconut milk in Vita-Mix (or other high speed blender) and puree on highest setting until smooth
  5. Place mixture in ice cream maker and freeze according to directions
  6. Top with nuts, berries or sprinkles and serve
I don't have coconut milk tonight but I'm waiting for the ice cream tub for the machine to freeze (takes 18 hours). I thought this might be a good ice cream to start with in P4 as it has no sugar/agave/honey added to it. The sugar comes from the bananas.
