Round 3 Phase 2 Day 34
Here comes September! Time goes by so fast. I'm still doing alright with my semi low calorie phase 2. Still eating some carbs like the corn/quinoa/flax cereal, a corn tortilla here and there, and some gluten free fortune cookies (1). Both yesterday and today I did not take my diet pills and I was fine through out the day. When I get hungry or start craving carbs I have a little bit and that usually takes away the cravings. My plan for phase 3 is to stick to what I'm doing now but just increase the amount of protein and veggies. Veggies are difficult to incorporate into our diet in large quantities in our house. I've been searching blogs and sites for recipe and menu ideas.
I'll be going to Denver in September to do the Rocky Mountain Rollergirl boot camp. That's going to kick my butt. The altitude is not what I'm use to here in Texas. I've planned on making a bento breakfast/ lunch for the plane trip there. I have a laptop lunch box.

I pack laptop lunch boxes/ bento boxes for my kids for school. I started when my son started going to school and was such a picky eater. I've found it is a great way to also keep me on track with my diet when I know gluten free/carb free/sugar free/lactose free/nut free menus aren't going to be readily available. Bento just refers to the way the portable lunch is packaged. It's usually in bite size portions that consists of a rice/noodle portion, a protein portion and vegetable portion. That's simplified version of it any way. The lunch boxes themselves come in all cute colors, size or shapes. There are also molds and accessories used to decorate the food.
I have to admit, I love bento boxes and bento style lunches. I'm a total dork. I have the rice molds and the egg molds. I have cookie cutter, cheese cutters, picks and silicon cups/dividers. I've been known to dye my kid's rice or noodles pink/purple/green.

Of course, rice is a no no in P2 and P3 but I used kelp noodles for some of the noodle substitutes. You can also just omit the rice while on P2 and P3. It's still just as cute!
